Ingredients:
60ml (1/4 cup) orange juice or lemon juice
22ml (1.5 tbsp) masala
60ml ((1/4 cup) maple syrup

Sweet and Spicy marinade

Ingredients:
60ml marmelade
30ml maple syrup
22ml (1.5 tbsp) masala

Au Naturel marinade
Ingredients:
80ml (1/3 cup) plain yogurt
22ml (1.5tbsp) masala

Asian marinade
Ingredients:
60ml (1/4 cup) orange juice
30ml (2 tbsp) soy sauce
5 ml (1 tsp) sesame oil
22ml (1.5 tbsp) masala

Balsamic marinade

Ingredients:
30ml ( 2 tbsp) olive oil
45ml (3 tbsp) balsamic vinegar
15ml ( 1tbsp) masala

Basic marinade

Ingredients:
60ml (1/4 cup) olive oil
22ml (1.5tbsp) lemon juice
15 ml (1 tbsp) masala

Mediterranean marinade
Ingredients:
60ml (1/4 cup)red wine
30ml (2 tbsp) wine vinegar
15 ml (1 tbsp) olive oil
15ml (1tbsp) masala

Try preparing one batch of marinade without the masala and then dividing it up and tasting many different spices, adjust the quantity accordingly for a perfect balance.






Marinate meat for 2-24 hours.


All recipes on left are for 500g boneless meat
(750g bone in) Approximately 1 lb.

Any can also be brushed on vegetables for grilling or try marinating firm tofu chunks for a vegetarian twist on the grill
