Ingredients:
Serves 4-6

5ml (1 tsp) vegetable oil
2 medium onions, chopped
22ml (1.5 Tbsp) masala
400ml ( 1 can ) coconut milk
125ml (1/2 cup) chicken or vegetable stock
1 can of crushed tomatoes
1kg boneless meat/fish/ vegetables or any combination

 





Heat oil over medium heat in a heavy bottomed casserole; cook onions until soft and transluscent. Add masala and stir for one minute.

Add the coconut milk, stock and tomatoes. Bring to a boil and add the meat and or vegetables, simmer until cooked. If using fish, cook the sauce for about 20 minutes and then add the fish so as not to overcook, cook for a further 10 minutes.

Serve with rice.
